Kim Murphy is a certified Plant-Based Health Coach, the founder of Simply Plant Based Kitchen, and an Amazon best-selling author of Plant Powered. A former high school band and color guard teacher for 17 years, Kim now teaches a different passion: how to use whole food plant-based eating to create lasting health, energy, and confidence.
Kim started Simply Plant Based Kitchen to help busy and overwhelmed people make healthy eating simple, realistic, and delicious. Her first attempt at a whole food plant-based lifestyle over a decade ago was short lived. Although she lost weight and felt better, the recipes felt complicated, time consuming, and impractical for a working mom juggling long hours. Slowly, old habits returned and with them came weight gain, fatigue, and frustration.
Everything changed after her father passed away from Alzheimer’s following years of heart disease, high cholesterol, and other chronic conditions. Kim recognized many of the same warning signs in herself and made a commitment to do things differently. She returned to the research, adopted a progress not perfection mindset, and focused on simple meals made with everyday ingredients that actually tasted great.
Within three months, Kim lost 17 pounds and 20 inches, regained her energy, cleared her brain fog, and felt better than she had in years. Inspired by her own transformation, she left the classroom to help others skip the struggle and discover how powerful and sustainable a whole food plant-based lifestyle can be.
Kim holds a Plant Based Nutrition Certificate from eCornell and the T. Colin Campbell Center for Nutrition Studies, along with a Health Coaching Certification from the Institute of Integrative Nutrition. She now coaches thousands through her Plant Powered Life program.
Kim lives in Cedar Park, Texas with her husband Shawn, their two sons Mason and Hayden, two Huskies, and two cats.

Mediterranean-Inspired Vegan Comfort Food is a cozy, flavor-packed cooking demo that offers a taste of the Mediterranean, but plant-ified and oil free! You’ll learn how to make Creamy Vegan Italian “Chicken” Gnocchi Soup featuring soy curls, Mediterranean Kalamata Olive Hummus, and Za’atar Spiced Crispy Baked Pita Chips. These delicious recipes are perfect for easy dinners or entertaining, showing how plant-based food can be both nourishing and deeply comforting.
