Hi Koya! We’re excited to meet you during the upcoming vegan cruise. Could you tell us about your journey towards adopting a plant-based lifestyle? Did you have any challenges?

My journey toward a plant-based lifestyle began as an intentional exploration of aligning my health, values and environmental impact. It started with a curiosity about the connection between food, wellbeing and the planet and quickly became a deeply personal commitment to living holistically. One of the biggest challenges I faced was navigating societal norms—explaining my choice to family, friends and colleagues while learning to adapt to a new way of eating. I overcame this by focusing on education, surrounding myself with a supportive plant-based community and reminding myself of my “why”: a desire to thrive physically and spiritually while contributing to sustainability. 

The field of vegan nutrition and wellness is constantly evolving. How do you stay updated on the latest research or trends in vegan nutrition and how do you apply this knowledge in your work? 

I stay informed through ongoing education—whether that’s reading peer-reviewed research, attending conferences or collaborating with fellow experts in the wellness space. I got my plant-based nutrition certification from T. Colin Campbell Center for Nutrition Studies (eCornell) and my health coach certification from the Institute for Integrative Nutrition. I also keep a pulse on the latest trends and evidence-based practices by engaging with thought leaders and medical professionals. In my work, I integrate this knowledge into my teachings, ensuring that everything I share—whether in classes, workshops or social content—reflects both innovation and timeless wellness principles. My intention is to translate complex concepts into practical, actionable guidance for those I support. 

What is the “why” or driving motivational force behind your work? 

My “why” is deeply rooted in helping others live lives full of vitality, balance and purpose. I believe in a holistic approach to wellbeing—one that nurtures the body, mind and spirit—while also prioritizing sustainability for the planet. I’m passionate about building a community that empowers people to thrive, recognizing that small intentional choices can create lasting transformations, not just for individuals but for our collective future. 

Can you share any tips or must-have items for newcomers to the vegan lifestyle? 

Absolutely! For newcomers, I recommend: 

  • Start simple: Focus on whole foods like fruits, vegetables, grains, legumes, nuts and seeds to build a strong foundation. 
  • Equip your kitchen: Must-have items include a high-speed blender, a sharp chef’s knife and a go-to plant-based cookbook or website for inspiration.
  • Plan ahead: Always have water, supplements and healthy snacks on hand (like trail mix or fruit) to avoid temptation when on the go. 
  • Embrace discovery: Explore new ingredients, try plant-based restaurants and enjoy the creativity that comes with vegan cooking. 
  • Seek support: Join online communities or local groups to connect with others on the same journey. It makes all the difference.

What are you most looking forward to during Holistic Holiday at Sea 2025? 

I’m looking forward to connecting with like-minded individuals who are passionate about wellness and sustainability. There’s something magical about gathering in a shared space, learning from one another and being immersed in a community that prioritizes health, growth and holistic living—all while surrounded by the beauty of the sea. 

Do you have any goals or wishes for the upcoming trip in March? 

My goal is to inspire and empower everyone I meet to embrace and evolve their own journey of wellbeing. I hope attendees leave my sessions feeling energized, equipped with tools to live more intentionally and motivated to incorporate sustainable wellbeing practices into their lives. My wish is for this trip to feel transformative—a true moment of renewal and connection. 

What are your offerings at sea and can folks across the fitness spectrum participate? 

I will be offering holistic wellness sessions that include a mix of mindful movement, breathwork, lifestyle design and practices designed to nourish the mind, body and spirit. Whether you’re new to fitness or have an advanced practice, my sessions are crafted to be accessible to all. I encourage everyone to come as they are—my focus is on creating an inclusive, uplifting experience for every participant. 

Will you be attending the plant-based cruise trip with family or friends? 

Yes! I’ll be attending with my husband, Daren Grainger. I’m so excited because it’s been my dream to travel the world with the love of my life doing what I love and now that dream has finally manifested. He’s certified in yoga and neuro emotional coaching and will be teaching the classes with me throughout the cruise. 

Will you offer onboard consultations in addition to the discussions and presentations you will lead? 

Yes, I plan to offer one-on-one consultations for those seeking deeper guidance. These sessions will provide personalized support, whether it’s related to transitioning to a plant-based lifestyle, holistic wellness practices or creating sustainable habits. I want to ensure that participants feel seen, heard, and supported throughout their journey.
